2 lbs. ground meat (beef, pork, veal) | 2 tbs. chopped capers |
1/2 lb. chopped chicken livers | thyme |
2 cans mushrooms, stems & pieces | basil |
3 stalks celery | rosemary |
1 large onion | salt, pepper |
4 large cloves garlic, mashed | parsley |
1 oz. ± anchovies mashed | 1/4 cup olive oil |
In a large frying pan, put olive oil, add garlic, mushrooms, sauté 10 min. Add chopped onion & celery, sauté until tender. Add seasonings & cook 5 min. Add ground meat & cook until well done, 15 min. ±. Par boil chicken livers about 5 min., chop coarsely & add to pan. Add capers, beef or chicken stock, mix well & cook about 10 min. Adjust seasonings & consistency. Add anchovies. Mix well. Remove to low heat. Serve over toast.
