Fungi Piccanti
(Piquant Mushrooms)
1 lb. small mushrooms |
1/4 tsp. oregano |
1/2 cup olive oil | 1/2 tsp. salt |
3/4 cup red wine vinegar | 2 Tbs. sugar |
1/2 cup water | 2 large cloves garlic |
5 or more peppercorns | 2 bay leaves |
In large pan, enamel or ceramic, add all ingredients except mushrooms. Bring to a boil. Add mushrooms (skinned peppers, parboiled celery, onion or other vegetables may also be added) and simmer covered 5 min. Let marinate until it reaches room temp. Remove garlic and discard. Transfer mixture to glass, ceramic, or plastic container and refrigerate. Let marinate, covered, for at least 3 days.
