Roasted Mushrooms
4 cups assorted mushrooms | 4 Tbs. olive oil |
4 large garlic cloves, sliced |
2 Tbs. balsamic vinegar |
2 Tbs. fresh thyme leaves | 2 Tbs. fresh rosemary |
1 tsp. salt | fresh ground pepper |
Preheat oven to 425°. Combine vinegar, oil, salt and pepper in large bowl. Add oil in slow stream, whisk to blend. Add garlic, herbs and mushrooms and toss to coat. Transfer to baking sheet. Roast for 15 min. Turn once.
