Elio's Frittata

one or two eggs

salt, pepper

leftover mashed potatoes

olive oil

onion, chopped

Using a heavy pan, sauté the onions in olive oil until tender. Season. Beat the eggs and mix with mashed potatoes. Pour over the frying onions and stir. As the edges of the frittata start to solidify, lift them gently with a spatula to get the uncooked eggs down to the bottom of the pan. When the bottom of the frittata is golden brown, turn it over and cook the other side. Slide onto plate.
