Fettuccine di Maiale Fritte
(Sliced Fried Pork Tenderloin)
2 lbs. pork tenderloin
Follow directions as Fettuccine di Manzo Fritte (fried beef slices), adding rosemary to seasoning. Or after seasoning you dip in fine bread crumbs, pounding crumbs into meat, then in beaten egg mixture and back into bread crumbs again. Fry until golden on both sides. Serve with green salad or lemon wedges.
