Rapi Greens (Rapini)

2 lbs. rapi | 1/4 tsp. thyme |
2 slices bacon | 1/2 tsp. basil |
1/4 cup olive oil | salt |
2 large cloves garlic | pepper |
Wash rapi well, discard hard part of stems (that part that does not break when sharply bent). In a pot put 3 qts. water. Bring to a boil. Cut rapi in half lengthwise and add to boiling water. Let boil 5 to 10 min. Drain in colander and squeeze dry with hands, forming into balls. In a frying pan fry bacon until crisp. Remove bacon and discard (or eat). Place chopped garlic in bacon drippings, add olive oil. Sauté until garlic is slightly golden. Chop rapi balls coarsely and add to pan. Sauté over medium heat 10 to 15 min. Serve any way you like it.
