Insalata di Cavolo

(Coleslaw)

1 head cabbage shredded
( as fine as possible)

1 clove garlic
1/2 cup wine vinegar 1/2 cup olive oil
2 Tbs. capers (optional) salt, lots of pepper

 

In a large bowl place cabbage. Sprinkle with salt and pepper. Chop capers and spread over cabbage. Pour oil on top of cabbage. Mash garlic in a cup and add vinegar, mix well. Strain over cabbage. Mix well. Serve (better after 3 or 4 days).
