4 oz. salt pork |
sage |
| 3 stalks celery | rosemary |
| 1 large onion | thyme |
| 4 cloves garlic | parsley |
| basil | salt, pepper |
Chop to a paste or use food processor, then sauté in 1/4 cup olive oil until golden. Add (1) 28 oz. can crushed tomatoes, 2 cans water and 2 bay leaves. Cook 5 minutes. Add 1 can (15 oz.) cannellini beans and 1 can potatoes, blended. Adjust consistency with water or stock. Boil 5 minutes. Add 1 cup ditalini. Cook until done. Check seasonings and consistency, adjust. Discard bay leaves and serve.
