Lobster Newburg

Boil lobster, de-bone and cut into small pieces. Place in pan with a little butter; add sherry or brandy and sauté 2 or 3 min. Remove from pan; add cream to sherry or brandy in pan plus cayenne pepper and nutmeg. Mix well. Add this mixture to beaten egg yolks. Return to pan and cook, stirring until it thickens. Add lobster pieces and serve on toast wedges.
